When you are used to having sugar (and sugar is in a lot of what we eat – not just sweets, cakes, candies and biscuits) – the physical cravings for it can be intense when you restrict it from your diet.</p>
<p>Dr. Dukan comes to the rescue with some great recipes for every stage of the Dukan Diet to allow you that sweet fix but without getting off your diet track. Dr. Dukan recommends using aspartame or nutrasweet as well as sucralose or splenda as alternatives to sugar artificial sweeteners. If you are okay with those artificial sweeteners, follow Dr. Dukan’s recipes exactly as they are low in calories and have the sweet taste you want to satisfy your cravings. However, we don’t think aspartame is good for you so we’d recommend stevia or other sugar substitutes instead of aspartame. You must avoid fructose, a fruit sugar based product as it is not allowed in the diet. If you get a good stevia and use it properly, you shouldn’t have the aftertaste that people sometimes complain of with stevia.</p>

This is an easy, basic recipe that you need very few ingredients for. Make it to taste and enjoy the delicious Dukan approved sweet treat in every phase of the diet.</p>

<strong>Cafe, Chocolate or Vanilla Creme </strong><br />
serves 4<br />
3 eggs, separated</p>
<p>¼ tsp cornstarch</p>
<p>1 c skim milk</p>
<p>Flavoring (choose one): 1tsp instant coffee, 1 tsp non-fat cocoa powder dissolved in water or 1 vanilla pod, split lengthwise, insides removed and mixed with a few drops of vanilla extract.  Sweetener to taste. Dukan uses aspartame (nutrasweet). You can also use Splenda. We recommend Stevia because it is a natural sweetener with no calories that has no negative long term side effects.</p>
<p>Now – how to incorporate the ingredients: First, make the ‘creme anglaise’: In a bowl, mix the egg yolks with the cornflour and beat until you have a smooth mouse. Pour the milk into a sauce pan and add the flavoring of your choice – either coffee, cocoa or vanilla. Warm over low heat. Remove from heat. Add the warmed milk mixture to the egg yolks. Put back on a low heat and stir well until the mixture thickens. Turn off the heat as soon as the mixture sticks to the spatula. You can now add sweetener like aspartame or stevia to taste. Pour into a large souffle dish or individual ramekins. Allow to set in the refrigerator. Serve very cold. You could also put this in an ice cream maker following the instructions that come with your ice cream maker.<br />

<p><em>Dukan Bavarian Mousse with Strawberry Jelly</em></p>
<p>Prep time: 15 min  Rest time: 3 hours</p>
<p>Serves 1</p>
<p>Phase: PP (Attack phase approved!)</p>
<p>Ingredients</p>
<p>2 egg whites</p>
<p>1 sheet of gelatin</p>
<p>2 Tbsp 3% Bridelight cream (tolerated item – limited amount each day) This doesn’t appear to be readily available in the US – you will likely need to find a replacement cream that is 2-3% fat and remember as a tolerated item, you cannot have unlimited amounts each day! (We’ve not tried it yet but read a possible alternative could be low fat sour cream with a bit of sweetener and a couple of drops of fat free milk.)</p>
<p>4 ½ Tbsp powdered sweetener (stevia, aspartame, splenda, etc)</p>
<p>1 tsp <a href="http://www.amazon.com/gp/product/B001DHNMEA/ref=as_li_tf_tl?ie=UTF8&#038;tag=hotolowefaa05-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=B001DHNMEA"target="_blank">Strawberry Flavoring</a><img src="http://www.assoc-amazon.com/e/ir?t=hotolowefaa05-20&#038;l=as2&#038;o=1&#038;a=B001DHNMEA" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /><br />
 (no sugar)</p>
<p>3 drops red food coloring (this of course is optional and we would recommend avoiding it as it is an artificial color)</p>
<p>1 pinch salt</p>
<p>6 level Tbsp of fat free fromage frais – if you have a difficult time obtaining fromage frais in your area, you could try mixing fat free cream cheese with no fat smooth cottage cheese or use fat free mascarpone or even a fat free yogurt and fat free smooth cottage cheese combination. However, if you can find fromage frais – go with that!!</p>
<p>Use a Chinese strainer lined with kitchen towel to drain off 6 table spoons of fat-free fromage frais overnight. The following day, add 2 table spoons of 3% fat Bridelight cream and 2 tablespoons of sweetener and mix. Whip 2 egg whites with a pinch of salt until very stiff. Work them into the fromage frais and hang in gauze, leaving it to drain in a cool place for 3 hours. During this time, prepare the jelly:  put a sheet of gelatine, 1 teaspoon of strawberry flavoring, 3 drops of red food coloring and 2 ½ tablespoons of sweetener into 80cl of warm water. Make sure that the gelatine has melted fully and put in a cool place until you are ready to make up the plates. To do this, place the gauze and its contents into a heart-shaped mould and press it in a little so that it takes shape. Take out of the mould onto a plate and remove the gauze. Mash up the jelly with a fork and arrange it around the bavarois (or your little cream cake).<br />

<p>2 Tbsp orange blossom water</p>

<p>Zest of 1 orange and 1 lemon</p>
<p>Gently heat the milk. Add the fromage frais, butter flavoring, yeast, orange blossom water, eggs and salt. Whisk thoroughly. Then add the brans and powdered protein (optional). Heat the oven to 200°C.</p>
<p>Pour the mixture into a mould in the shape of a crown. Dust with aspartame or stevia powder and cook for 20 minutes. At the end of cooking time, remove the cake, decorate with the zest and put back in the oven for a further 10 minutes.<br />

<p>20 drops lemon meringue pie flavoring (the Dukan Diet UK webshop has this flavoring for purchase and they ship worldwide)</p>
<p>2 Tbsp powdered sweetener</p>
<p>6 drops red food coloring</p>
<p>Whip the egg white until stiff and fold in the fromage frais, lemon meringue pie sweetener and 1 Tbsp powdered sweetener.</p>
<p>In a separate bowl, mix the petits suisses with the strawberry flavoring and 1 Tbsp powdered sweetener.</p>
<p>Divid the mixture into two serving dishes – finishing with the mousse.</p>
<p>Leave to cool in the refrigerator before eating.<br />

<p>5 drops of blue food coloring (optional)</p>

<p>Remove the oven rack and preheat to gas mark 5 or 375 degrees F.</p>
<p>Boil the milk with the cardamom seeds (open the pod and remove the seeds) in a saucepan. Leave to infuse for 15 minutes.</p>
<p>In a bowl, break the eggs and whisk them.</p>
<p>Add the pistachio flavoring and sweetener and mix.</p>
<p>Add the hot milk, whisking the mixture continuously.</p>
<p>Finish with the drops of food coloring, mixing well.</p>
<p>Arrange the ramekins on the rack and pour in the mixture.</p>
<p>Bake in pre-heated oven for 30 minutes.</p>
<p>Leave to cool at room temperature, then place in the refrigerator for 2</p>

<p><em>Mega Protein Vanilla Butter Rum Crepe Pancakes</em></p>
<p>Prep 10 mins Cook time: 5 mins</p>
<p>Makes 10 – max you can have during cruise phase is 2 pancakes per day!</p>
<p>Phase: Cruise</p>
<p>200 g silken tofu</p>
<p>100 g cornflour (tolerated item) (cornstarch in the US)</p>
<p>10 Tbsp Protifar Protein Powder</p>
<p>20 drops Melted Butter Flavoring</p>
<p>30 drops White Rum Flavoring</p>
<p>1 tsp Bourbon Vanilla Flavoring</p>
<p>2 Tbsp powdered sweetener (or more to taste)</p>
<p>4 eggs</p>
<p>½ litre skim milk</p>
<p>In a large bowl, combine the tofu, cornflour (or cornstarch), protein powder and eggs – mix well.</p>
<p>Add flavorings and mix again.</p>
<p>Slowly stir in the milk to get a smooth consistency.</p>
<p>Heat a non-stick pan and ladle the batter onto the pan. Brown one side and flip to the other side.</p>

One of the great things about the Dukan Diet is that you are allowed to eat delicious lean meats in unlimited quantity. The diet is a meat lovers dream. The first category in the allowed foods list is lean meats. You are allowed veal and beef. All roasts or grilled beef including steaks, tenderloin, roast beef, and sirloin. You do need to stay away from ribs and rib eye cuts as they are too fatty. You can also eat veal escalopes and roast veal. Veal cutlets are okay as long as you trim the fat from the veal.</p>
<p>Steak recipes are available in the Dukan Diet Recipe book. You are also encouraged to create your own meat and beef recipes for the diet. In addition to steaks, there are exceptional meatloaf, meatball recipes and various veal recipes for your attack menu.</p>
<p>If you like tri-tip steaks, try this delicious beef recipe.<br />
<strong>Dominique&#8217;s Sear-Roasted Sirloin Tri-Tip Steaks with Chive &#8220;Butter&#8221; &#8211; Dukan friendly</strong><br />
3 Sirloin tri-tip steaks 3/4 to 1 inch thick<br />
Coarse salt<br />
1/2 bunch of chives coarsely chopped<br />
4 Tbsp virtually fat-free cream cheese, fromage frais or quark<br />
1/4 tsp Dijon mustard<br />
1/8-1/4 tsp fresh lemon juice<br />
Freshly ground pepper (preferably white and black peppercorn)<br />
Lightly sprinkle the steaks with coarse salt and lightly cover and refrigerate for 8 hours to overnight.<br />
Make the chive &#8220;butter&#8221;: Pound the chives with a dash of salt in a large mortar to get a coarse paste. (You can also use a food processor). Place the non-fat fromage frais in a bowl. Add the chives, lemon juice and stir until evenly incorporated in the butter. Stir in the pepper and add a touch of salt to taste. Scrape the non-fat dairy chive mixture onto a sheet of parchment paper or wax paper. Fold it up and wrap it rolling it into a log shape. Twist the ends of the paper in the opposite direction to seal it. Chill the chive fromage frais log for several hours or until solid.<br />
For steak:<br />
Place under broiler or on grill and grill/sear for a few minutes at very high heat. After 2-3 minutes depending on thickness of the steak once you have some grill marks or a nice sear -flip them over and put the steaks into the preheated oven and roast for an additional 3 minutes more. Rest the steaks for a few minutes more. Transfer the beef to a platter and top each with a pat or two of the chive &#8220;butter&#8221;. Let them rest for a few minutes. Serve with an additional small sliver of chive quark if desired.<br />
Makes 3 steaks</p>
<p>If you are looking for a beef recipe that is a little spicy, the next one is one from the Dukan Diet cookbook. You will want to have as many protein recipes in your repertoire as possible. Dukan advises you to not get hungry so you will want to have easy to grab things on hand such as lean cold cuts with no added sugar or ingredients. Roast beef is a perfect choice. You can also make extra of any of the beef recipes so you have them to pick at when you feel yourself getting hungry.</p>
<p>The next pure protein recipe is rich in flavor and made with sirloin or your choice of lean beef.<br />
<strong>Vietnamese Shaking Beef</strong><br />
Prep time: 10 minutes (plus 30 minutes marinating)<br />
Cooking time: 5 minutes<br />
14 ox sirloin steak<br />
2 Tbsp soy sauce<br />
1 Tbsp oyster sauce<br />
1 large piece of ginger, grated<br />
Black pepper<br />
3 drops of oil<br />
4 garlic cloves, crushed<br />
A few coriander leaves, chopped<br />
Cut the beef into 1/2 inch cubes. Mix with the soy sauce, oyster sauce, ginger and black pepper. Marinate for at least 30 minutes. Just before serving, brown the garlic in a frying pan (oil the pan and then wipe it with a paper towl) As soon as the garlic begins to brown and smell good, add the meat and cook it over very high heat, stirring the mixture quickly for 10-15 seconds. The meat should not be ovecooked and should be a little rare. Garnish with coriander leaves.</p>

What can you eat on the Dukan Diet attack phase? During the attack phase of the Dukan Diet, you may find yourself in search of new recipes that are Dukan approved. If you don&#8217;t have tons of time to research recipes, we would recommend buying the Pierre Dukan Cookbook full of Dukan Diet recipes. If you haven&#8217;t bought the recipe book yet or if you are just testing the waters to decide if the diet is right for you, then here are a couple of Dukan Tuna recipes perfect for the most challenging part of the diet, the attack phase.</p>
<p>If you want to succeed during the attack phase which is when you will lose the most weight the fastest, you need to  stock plenty of proteins from Dukan&#8217;s approved list of 72 foods that you can eat during the attack phase. Dr. Dukan recommends stocking up on more than you think you may need of the approved proteins so that you don&#8217;t feel tempted to cheat on the diet because of lack of food. You should never go hungry on the diet.<br />

It is so important not to eat foods that are not on the list of safe foods. Dr. Dukan equates cheating to sticking a pin into an inflated balloon. If you do make a mistake, and cheat on the diet &#8211; he recommends the following. For the rest of that day, you have to change strategy a bit. You must count calories and limit what you eat until bedtime. Then, just forget about it, jump back on track and make the right choices from the approved food categories going forward.</p>
<p>If you can help it, don&#8217;t go out to eat during your attack phase. It will make it easier for you if you avoid temptation and meals with potential hidden fats or oils. If you must eat out for a work function or special occasion &#8211; eat within the confines of the Dukan diet menu as much as you can. If you are at a restaurant, you can usually ask the chef to prepare a beef, fish or chicken dish without oil, seasoned with just salt and pepper. Stay away from the bread, alcohol and dessert! When you get home, reward yourself with a Dukan Dessert recipe.</p>
<p>In this post, we will give you two Dukan approved Tuna Tartare recipes. The first is the Dukan Tuna Tartare recipe from the Dukan Cookbook. Remember this is totally attack phase approved.<br />
<strong>Dukan Tuna Tartare or Tartare de Thon</strong><br />
Prep time: 15 minutes (plus 15 minutes marinating)<br />
No cooking required<br />
2 1/4 lb tuna (1kg)<br />
Juice of 1 lime<br />
1 garlic clove, crushed<br />
1/2 bunch of chives, finely chopped<br />
2 inch piece of ginger grated<br />
1 Tbsp virtually fat-free fromage frais<br />
Salt and black pepper<br />
Cut the tuna into small cubes and drizzle with lime juice. Mix the garlic, ginger, chives, and fromage frais in a bowl. Season with salt and pepper and add the fish. Mix thoroughly and leave in the fridge for 15 minutes before serving.</p>
<p>If you want an alternative, I much prefer this tartare recipe and have enjoyed a variation of it long before I heard of the Dukan Diet.<br />
<strong>Dominique&#8217;s Tuna Tartare</strong><br />
Prep time: about 10 minutes and five &#8211; ten minutes of marinating<br />
No cooking<br />
1 Tbsp finely chopped shallots<br />
1 Tbsp unseasoned rice vinegar<br />
1 Tbsp fresh lemon juice<br />
tiny dash of chile powder (optional)<br />
1 tsp soy sauce<br />
1 tsp wasabi paste or mustard<br />
1 pound sushi-grade tuna<br />
Salt &amp; pepper</p>
<p>Cut the tuna into 1/4 inch cubes. Mix the shallots, vinegar, lemon juice, chile powder, soy sauce, and wasabi paste. Season with salt (minimally) and pepper. Add tuna to the mixture. Mix thoroughly but carefully and leave in the fridge for about 5-10 minutes before serving.</p>
<p>If you want an easy Dukan Tuna recipe that you can throw together for a snack or a quick meal, try this easy low carb recipe with canned tuna.<br />
<strong>Caper Canned Tuna Salad</strong><br />
1 lb 1 oz canned tuna in brine or water (not oil)<br />
1 tsp capers, chopped<br />
1 tsp onion powder<br />
2 Tbsp chives or onion finely chopped<br />
Salt and pepper<br />
Mix the ingredients together with a fork until well blended  &#8211; serve chilled.<br />
Serves 2</p>
